Farming

While the rows of grapes might look calm on the surface, conventional farming often strips away the complexity that makes these places thrive.
At Schema, we work with vineyards that support biodiversity— where vines grow alongside native plants, cover crops, and wildlife that keep the system in motion.

Winemaking

In the cellar, we aim to do just enough. That starts with picking at the right moment— when the fruit holds onto its freshness and natural structure.
From there, we let the vineyard guide the rest. Native fermentations, minimal additions, and a focus on texture over power shapes the wine.

We look for lower pH and modest alcohol levels— wines that feel bright and layered rather than loud. The goal isn’t to imitate the Old World, but to let restraint and clarity lead, so each wine carries its place and season forward with integrity.
